Trim excess fat from the chuck roast, cutting it into big chunks.

Season the chuck roast chunks with black pepper, paprika, salt, ancho chili, and garlic powder, omitting the brown sugar for now.

Heat canola oil in a big stock pot over medium-high heat.

Sear the seasoned chuck roast chunks in the pot for about 3-4 minutes on each side until a nice crust forms.

Add onions on top of the seared meat.

Stir the onions into the bottom after turning the meat, allowing them to cook down.

Add brown sugar to the pot, followed by 8 ounces of beer and 1/4 cup of ketchup.

Add a shake of Worcestershire sauce and stir to incorporate all ingredients.

Cover and braise in the oven for about 2 hours, checking the liquid level occasionally.

After 2 hours, use a potato masher to break apart the braised meat, which should fall apart easily.

Toast the buns before assembling the sandwiches.

Mix 1 tablespoon of sriracha into 1 cup of mayonnaise to make sriracha mayo.
