Whipped Feta Dip with Roasted Cherry Tomatoes | Food Channel L Recipes

Preheat the oven to 200°C (400°F).

In a bowl, combine cherry tomatoes, 50 ml olive oil, 30 ml wine vinegar, 1 tbsp honey, 2 cloves of minced garlic, and salt and black pepper. Toss to coat.

Spread the cherry tomato mixture on a baking sheet and roast in the oven for about 20-25 minutes until the tomatoes are blistered.

In a food processor, combine 200 g feta cheese, 100 g ricotta, 100 g sour cream, 1 tsp dry oregano, the juice of 1 lemon, and 30 ml olive oil. Blend until smooth and creamy. Season with salt and black pepper to taste.

Serve the whipped feta dip topped with the roasted cherry tomatoes.
