Prepare the pasta dough by mixing 500 g of semola rimacinata, 260 g of warm water, and a pinch of salt until a smooth dough forms.

Roll the dough into a long cord and shape it into the traditional Lorighittas format.

In a pan, heat some olive oil and sauté 1 chopped porro and 1 chopped spicchio di aglio until soft.

Add 3 salsicce, breaking them up as they cook.

Stir in 250 g of pomodorini gialli and 300 g of funghi porcini surgelati, along with half a glass of white wine.

Add 1 leaf of alloro, 1 sprig of rosmarino, and 1 fresh peperoncino.
