Heat extra virgin olive oil in a cast iron pot over medium heat.
Add chopped onion and garlic; stir-fry until fragrant.
Add diced sweet potato, carrot, capsicum, and zucchini; cook until softened.
Stir in spices: turmeric, paprika, cumin, coriander, and a touch of cinnamon; cook until aromatic.
Add canned tomatoes and about 2 cups of vegetable stock; stir to combine.
Season with salt and black pepper.
Add canned chickpeas and optional aquafaba; stir well.
Add raisins and diced dried apricots for sweetness.
Cover and simmer for about 20 minutes, stirring occasionally.
Finish with a squeeze of fresh lemon juice and serve over microwavable brown basmati rice, garnished with fresh coriander and toasted almonds.
