Heat extra virgin olive oil in a cast iron pot over medium heat.
Add chopped onion and 2 cloves of minced garlic; sauté until fragrant and soft.
Add diced sweet potato, carrot, zucchini, and bell pepper; cook until softened.
Stir in spices: turmeric, paprika, cumin, coriander, and a touch of cinnamon; cook until aromatic.
Add 2 cups of vegetable stock and a can of diced tomatoes; stir to combine.
Season with salt and black pepper; add rinsed canned chickpeas.
Add raisins and diced dried apricots for sweetness; stir to combine.
Cover and simmer for about 20 minutes, stirring occasionally.
After 20 minutes, turn off the heat and let it cool slightly.
Squeeze fresh lemon juice over the dish before serving.
Serve with microwavable brown basmati rice and garnish with fresh coriander and toasted almonds.
