1/4 tsp salt
1/2 tsp ground cinnamon
1/2 cup melted butter
4 – 8oz pkgs cream cheese, softened
1/2 cup light brown sugar
1/2 cup marshmallow fluff
1/4 cup plain nonfat Greek yogurt
1 tsp vanilla extract
4 eggs
Yellow & pink food coloring (optional)
1 cup chopped dark chocolate
1 cup heavy cream
Peeps of all colors (optional)
Cadbury mini eggs (optional)
Easter Sprinkles (optional)
Crushed Graham Crackers (optional)

Preheat oven to 325°F.

Mix together the graham cracker crust ingredients and use a 9.5” spring form pan to make your s’mores cheesecake crust.

Bake for 10 minutes and let cool while you make the cheesecake filling.

Cream the cream cheeses together in a stand mixer, stopping to scrape down the sides, until smooth, using a paddle attachment.

Add the brown sugar, marshmallow fluff and vanilla extract and mix until smooth.

Add the eggs 1 at a time and then the Greek yogurt.

Split the cheesecake batter in two to color them with the food coloring.

Spoon each color, alternatively, into your cooled graham cracker crust and gently swirl with a butter knife.

Bake for 50 minutes until just set.

Turn your oven off, but keep the cheesecake inside to gently bring the temperature down.

Use a wooden spoon to prop open the oven to slowly release the heat for about an hour.

Transfer the cheesecake to a cooling rack and let it come to room temperature before refrigerating.

Make the ganache by heating the heavy cream and pouring it over the dark chocolate.

Cover and let it sit for 5 minutes, then whisk together until smooth.

Pour the ganache on top of the cheesecake and decorate with Peeps and other candies as desired.
