Toasted coconut adds flavor while being lower in sugar
Blitz the graham crackers until fine.
Add melted butter a little at a time and mix until the consistency is like wet sand.
Press the mixture into serving cups using the back of a spoon to compact it.
Place the cups in the fridge to set.
Whisk cream cheese until creamy.
Add melted marshmallows and mix until well incorporated.
Add heavy cream, condensed milk, and vanilla extract; mix until creamy.
Add lemon juice and mix until combined.
In a pan over medium to low heat, add heavy cream for the ganache and heat until it starts to bubble.
Turn off the heat and add chocolate; mix until melted and combined.
Layer chocolate ganache in the cups and shake to even it out.
Add a layer of the cheesecake mixture on top of the ganache.
Sprinkle crushed graham crackers on top of the cheesecake layer.
Add another layer of ganache and smooth it over.
Top with melted marshmallow and more crushed graham crackers.
Optionally, add chocolate chips on top.
Place in the fridge to set for 4 to 6 hours.
