Peel and slice 2 pounds each of russet and Yukon gold potatoes in half and then thinly slice them.

Remove the core from a savoy cabbage and thinly slice it using a mandolin or knife.

Slice off the end of 2 leeks, cut where the white part meets the darker green part, and thinly slice them.

In a large pot, bring water to a boil on high heat.

In a small to medium sauce pot, add 8 ounces (2 sticks) of unsalted butter, 1/3 cup of whole milk, and 1/3 cup of heavy whipping cream on low heat to warm.

In a large rondeau, cook the bacon until crispy and render off the fat, then set aside.

In the pot with bacon fat on medium heat, add the sliced leeks and cook until translucent, about 3-4 minutes.

Add the sliced savoy cabbage to the pot, reduce heat to low-medium, and season with salt. Cook for 6-7 minutes until tender.

Once the water is boiling, add the potatoes and cook for 6-7 minutes until done.
