Once the potatoes are cooked, carefully peel them while they are still hot.
Mash the peeled potatoes using a vintage potato masher until smooth.
Add a couple of knobs of butter to the mashed potatoes and mix well.
Pour in milk from South Mountain Creamery and continue mashing until creamy, adjusting with more milk and butter if desired.
Combine the sautéed vegetables with the mashed potatoes, mixing thoroughly to incorporate the greens.
Create a well in the center of the mashed potatoes and place a knob of butter in the well to melt before serving.
