3/4 cup ketchup
2 teaspoons packed brown sugar
1 tablespoon brown sugar (optional)
1 teaspoon yellow mustard
1/2 teaspoon cayenne pepper (or 1/4 teaspoon for less spice)
1 teaspoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/2 teaspoon liquid smoke
1/2 to 1 teaspoon Worcestershire sauce
3/4 cup water
1/4 teaspoon salt
brioche buns (toasted)
butter (for buns)
purple onions (for serving)
hot pickles (for serving)

Brown 1 pound of ground chuck in a pan until well cooked.

In a separate pan, heat 2 tablespoons of oil.

Add 2/3 cup of finely chopped onions and 2 tablespoons of chopped red bell pepper to the pan and sauté for 5 to 8 minutes until softened.

Add 2 teaspoons of tomato paste to the sautéed vegetables and cook for about a minute, stirring.

Stir in 2 teaspoons of finely chopped garlic and cook briefly to avoid burning the garlic.

Add 3/4 cup of ketchup to the mixture.

Stir in 2 teaspoons of packed brown sugar (or 1 tablespoon for more sweetness).

Add 1 teaspoon of yellow mustard, 1/2 teaspoon of cayenne pepper (or 1/4 teaspoon for less spice), 1 teaspoon of chili powder, 1/4 teaspoon of garlic powder, 1/4 teaspoon of onion powder, 1/2 teaspoon of liquid smoke, and 1/2 to 1 teaspoon of Worcestershire sauce.

Mix well and add 3/4 cup of water and 1/4 teaspoon of salt.

Let the mixture cook for 2 to 3 minutes before adding the browned ground chuck.

Combine the meat with the sauce mixture, cover, and let it cook for at least 20 minutes to thicken and develop flavors.

If the mixture gets too thick, add a little more water as needed.

Serve on toasted brioche buns with butter, topped with purple onions, and alongside hot pickles and potato chips.
