Greek yogurt reduces calories while maintaining creaminess

Peel and clean 2 lbs of russet potatoes, then cut into cubes.

Add potatoes to a large pot with enough water to cover them and some salt.

Bring to a boil and boil for 15-20 minutes until fork tender.

Cut up 3-4 green onions.

In a mixing bowl, combine 1/2 cup sour cream, 1/2 cup mayonnaise, 1/4 teaspoon black pepper, 1/2 teaspoon salt, and 1 tablespoon white vinegar; whisk until smooth.

Add 3 teaspoons of ranch seasoning mix to the dressing and mix well.

In a large mixing bowl, combine cold potatoes, green onions, 3/4 cup sharp cheddar cheese, crumbled bacon, and the dressing mix.

Gently fold the dressing into the potato mixture until well combined.

Serve on a bed of lettuce topped with more bacon, cheese, and green onion.
