Put water in a saucepan over high heat.
Add butter, salt, and sugar to the water and cook until boiling.
Once boiling, turn off the heat and add flour, mixing quickly until a dough forms.
Let the dough dry out until it reaches the perfect texture.
Add eggs one by one or two by two, mixing well after each addition until fully incorporated.
Finish mixing by hand to achieve the perfect texture.
Transfer the dough to a piping bag.
Pipe the dough into desired shapes on a baking sheet lined with parchment paper.
Prepare a topping (referred to as 'catalog') to add on top of the piped dough.
Bake in the oven until golden brown and puffed up.
