Cauliflower Au Gratin

1 head of cauliflower
2 tablespoons butter
1/2 onion
green onion
2 cloves garlic
2 tablespoons horseradish
1 cup milk
1/4 cup vegetable stock
1 cup Swiss cheese
1/2 cup freshly grated parmesan cheese

Chop the head of cauliflower into pieces.

Boil water in a pot.

Add the chopped cauliflower to the boiling water and cook for about 4-5 minutes.

In a microwave-safe bowl, combine 2 tablespoons of butter, 1/2 onion, green onion, and 2 cloves of garlic. Microwave for a couple of minutes until softened.

Drain the cauliflower and return it to the bowl.

Add the microwaved vegetables to the cauliflower.

Stir in 2 tablespoons of horseradish, 1 cup of milk, and 1/4 cup of vegetable stock. Stir well.

Bring the mixture to a boil over high heat and let it boil for about 8 minutes until most of the liquid has evaporated.

Add salt and pepper to taste.

Stir in 1 cup of Swiss cheese and 1/2 cup of freshly grated parmesan cheese.

Pour the mixture into a baking dish and smooth it out.

Bake in the oven at 425 degrees Fahrenheit for about 25 minutes.
