Cauliflower Au Gratin

1 head cauliflower, cut into florets
3 oz Gruyere cheese
1 cup spinach
1 can full fat coconut milk
1 tbsp arrowroot
1/2 tsp salt
1/2 cup sliced toasted almonds
1/4 cup grated Parmesan cheese
2 tbsp olive oil

Preheat the oven to 425°F.

In a bowl, toss the cauliflower florets and onion with olive oil.

Spread the cauliflower mixture onto a parchment-lined baking sheet.

Add garlic cloves with the skins left on, cutting off the ends for easy removal.

Roast in the oven for 35 minutes or until golden brown.

Let the roasted garlic cool, then remove it from the skins and place it in a blender with the coconut milk.

Reserve some coconut milk to mix with the arrowroot later.

In a saucepan, combine the reserved coconut milk with arrowroot and salt, heating on medium until it thickens.

Layer spinach in the bottom of a baking dish.

Add the roasted cauliflower and onion mixture on top of the spinach.

Mix the toasted almonds and Parmesan cheese together and sprinkle over the cauliflower.

Layer the Gruyere cheese on top.

Bake in the oven at 375°F for 15 to 20 minutes until the cheese is bubbly.
