Greek Chicken Gyros

1.25 kg chicken thighs, skinless boneless
1 tbsp sweet paprika
1 tbsp regular paprika
1/2 tbsp mild curry powder
1 1/2 tsp cooking salt
1/2 tsp black pepper
1/3 cup extra virgin olive oil
1 cup plain yoghurt
3 tbsp whole-egg mayonnaise
2 tbsp yellow American mustard
2 tsp garlic powder
2 tsp sweet paprika
400g thick cut hot chips
2 tomatoes
3 cups cos lettuce
1/2 small red onion

Make hot chips first if using, keep warm in a 100C/200F oven.

Mix marinade then coat chicken well. Marinade overnight (bare minimum 3 hours).

Cook chicken 4 minutes each side in a non-stick pan or BBQ (no oil needed, marinade is enough).

Rest chicken loosely covered in foil for 3 minutes then slice.

Warm pita bread so they’re pliable (microwave a stack 1 – 1 1/2 min).

Smear 3 tbsp sauce down middle of pita, top with chicken, lettuce, tomato, scatter with onion, pile on chips, drizzle with more sauce.

Fold pita to enclose, wrap with foil to hold in place. Serve with remaining sauce and hot chips.
