Greek Chicken Gyros

Purchase 600 g chicken thighs from Tesco.

Mix chicken thighs with 3 packets of kebab spice mix and sesame seed oil in a mixing bowl.

Marinate the chicken in the fridge for 3 hours.

Skewer the marinated chicken thighs onto a metal skewer, alternating the orientation of each piece.

Set the Traeger pellet smoker to 180° C for indirect cooking.

Cook the chicken thighs until they reach an internal temperature of 74° C, checking with a thermometer.

While the chicken cooks, sprinkle water on flatbreads and heat them in the oven for 2 minutes.
