Indian Tacos

2 cups all-purpose flour
salt to taste
0.5 tsp baking powder
3 tbsp mustard oil
1 boiled potato
salt to taste
1/2 lemon juice
black pepper powder
red chili flakes
2 tbsp red chili sauce
2 tbsp tomato sauce
processed cheese (grated)

Take 2 cups of all-purpose flour in a bowl.

Add salt to taste and 0.5 tsp baking powder.

Add 3 tbsp of mustard oil to the flour mixture.

Mix all the ingredients well to form a soft dough.

Let the dough rest for 15 minutes.

In a pan, heat mustard oil and add long slices of a large onion to fry until slightly golden.

Remove the fried onions from the pan.

Roast dried red chilies in the same pan and remove them once done.

Add the roasted red chilies to the fried onions and mix with salt to taste, crushing them if desired.

Mash 1 boiled potato and add it to the mixture along with salt, black pepper powder, and juice of half a lemon.

Mix everything well to prepare the filling.

Divide the dough into small balls and roll them out into thin discs, slightly larger than a regular roti.

Heat a tava (griddle) on medium flame to cook the rolled out discs.

Cook the discs slightly on one side, then remove them as they will be roasted again later.

Prepare the sauce by mixing 2 tbsp red chili sauce and 2 tbsp tomato sauce in a bowl.

Take one disc and spread some grated processed cheese on one side.

Add the potato filling mixture on top of the cheese, then add more cheese on top of the filling.

Fold the disc over to cover the filling and cheese completely.

Heat the tava again and place the folded taco on it, pressing lightly to shape it.

Cook on medium heat, flipping to ensure both sides are cooked evenly until golden brown.

Serve hot with additional sauce if desired.
