Pick gungo peas from the pod, removing them from the pod.

Wash the gungo peas to remove any dirt.

Combine 1.5 cups of gungo peas, 2 cups of coconut milk, and 1 cup of water in a pot.

Add a piece of fresh thyme, 2 cloves of garlic, and 6 pimento seeds to the pot.

Add 1 teaspoon of salt to the mixture.

Cover the pot and cook for 30 minutes.

After 30 minutes, add 2 more cups of coconut milk to the cooked gungo peas.

Add 2 teaspoons of butter, more fresh thyme, chopped scallions, 1 whole scotch bonnet pepper, and 1 tablespoon of brown sugar to the pot.

Mix everything in and cover the pot to let it come to a boil.

Wash 2 pounds of rice 2-3 times to remove excess starch.

Add the washed rice to the pot and stir gently.

Turn the stove down to medium and cover the pot to cook the rice.
