Vegan Lemon Drizzle Cake

0.5 cup plant-based milk

Start with the dry ingredients: whisk together 2.5 cups of flour, 0.5 cup of sugar, 2 teaspoons of baking powder, and the zest of 1 lemon.

In a separate bowl, combine the wet ingredients: add 0.5 cup of lemon juice, 0.5 cup of cooking oil, 1 cup of desiccated coconut, 0.5 cup of plant-based milk, and 1.5 cups of Sprite or 7 Up. Whisk until well combined.

Pour the wet mixture into the dry ingredients and whisk until everything is well combined.

Grease a tray and pour the batter into it.

Bake in the oven at 170 degrees Celsius (around 330 degrees Fahrenheit) for 45 minutes.

Check if the cake is done by poking it with a toothpick; if it comes out clean, it's ready.

For the icing, mix 250 grams of icing sugar, the zest of 1 lemon, and 3 teaspoons of Sprite or 7 Up. Be careful not to make it too runny.

Pour the icing over the cooled cake, nudging it around the sides to let it soak in.

Decorate with some lemon slices on top.
