Vegan Lemon Drizzle Cake

16g Corn Starch
1 1/4 tsp Baking Powder
1/4 tsp Salt
Lemon Zest of 1 Lemon
30g Lemon Juice
200g Caster Sugar
74ml Olive Oil
208ml Almond Milk
3 tbsp Lemon Juice
3 tbsp Icing Sugar
Lemon Juice of half a Lemon
150g Icing Sugar

Preheat the oven to the appropriate temperature for baking.

In a mixing bowl, combine the all-purpose flour, corn starch, baking powder, and salt.

Add the lemon zest, lemon juice, caster sugar, olive oil, and almond milk to the dry ingredients and mix until well combined.

Pour the batter into a greased 9" x 5" x 4 1/2" loaf pan.

Bake in the preheated oven until a toothpick inserted into the center comes out clean.

While the cake is baking, prepare the drizzle by mixing lemon juice and icing sugar together until smooth.

Once the cake is baked and cooled, poke holes in the top and pour the lemon drizzle over it.

For the icing, mix lemon juice with icing sugar to achieve the desired consistency and drizzle over the cake.
