Kentucky Beer Cheese

1 large cheap domestic beer (24 ounces)
1 cup stale beer
1 pound extra sharp cheddar cheese (grated)
2 cloves crushed garlic
dry mustard (to taste)
freshly ground black pepper (to taste)
cayenne pepper (to taste)
pinch of salt
few dashes of Louisiana hot sauce
few drops of Worcestershire sauce

Pour 1 large cheap domestic beer into a bowl to flatten it, whisking to remove carbonation.

Grate 1 pound of extra sharp cheddar cheese and add it to the bowl of a food processor.

Add 2 cloves of crushed garlic, dry mustard, freshly ground black pepper, cayenne pepper, a pinch of salt, a few dashes of hot sauce, and a few drops of Worcestershire sauce to the food processor.

Pour in 1 cup of the flattened beer into the food processor with the other ingredients.

Process the mixture until very smooth and creamy, pulsing to start and scraping down the sides as needed.

Taste the mixture and adjust seasoning as desired, adding more salt, pepper, or spices if necessary.

Refrigerate the beer cheese overnight to let flavors develop, or serve immediately.

Serve in a glass bowl with extra cayenne pepper and garnish with celery and carrots for appearance.
