10 oz. (300g) pancetta
2 large onions, sliced fine
14 oz. (400g) jar of chickpeas, drained and rinsed
7 oz. (200g) cherry tomatoes
3 tablespoons olive oil
Juice from 1 large lemon
3 cloves of garlic, minced
1 tbsp smoked paprika
1 tsp garlic powder
1 tsp ground cumin
1 tsp dried oregano
1 tsp salt
Cracked black pepper (to taste)

Prepare the marinade by adding the olive oil and lemon juice to a large bowl. Mix well with a fork for around 30 seconds.

Dice the pancetta into small ½ cubes and add to the bowl with the chicken thighs.
