4 tbsp chopped fresh parsley
2 tbsp finely chopped chives

Place potatoes in saucepan covered with cold water. Add salt and boil potatoes until just tender (about 15–20 minutes depending on size). Drain and let cool only slightly for 2 minutes. Slice into ¼ inch – ½ cm thick rounds.

In a large dry frying pan over medium heat, cook the chopped bacon until crisp. Remove bacon and set aside, leaving about 2 tbsp of the bacon fat in the pan.

Add diced onion to the bacon fat (if there’s not enough fat add olive oil) and cook for 2–3 minutes until soft. Deglaze the pan with vinegar, stir in mustard, and warm stock. Simmer for 1–2 minutes.

Remove from heat, whisk in olive oil, and season with salt and pepper to taste.

While potatoes are still warm, gently toss them into the dressing with the crispy bacon in a large bowl. Let them soak up the flavour for 5-10 minutes.

Add parsley and chives just before serving. Serve warm or at room temperature, never cold.
