Start with 12 hard-boiled eggs, which can be reduced to 6 if desired.

Chop up 1/2 cup of dill pickles instead of using pickle relish due to added sugar.

Peel the boiled eggs and slice them in half, separating the yolks and whites.

Place the yolks in a large bowl and chop the whites into small pieces, placing them in another bowl.

To the yolks, add 2/3 cup mayonnaise, chopped pickles, 2 tablespoons mustard, 2 teaspoons white distilled vinegar, 1 teaspoon paprika, 1 teaspoon black pepper, and 1/2 teaspoon salt.

Mash the yolk mixture together until smooth and creamy.

Add the chopped egg whites to the yolk mixture and stir until combined.

Cover the mixture and refrigerate for about an hour before serving.
