Place 8 eggs in a pot and cover with water.
Bring the pot to a boil.
Turn off the heat and let the eggs sit for 10 minutes.
Transfer the eggs to an ice bath to cool.
Peel the cooled eggs.
Use a potato masher to mash the peeled eggs.
Add 1/3 cup mayonnaise, 2 teaspoons Dijon mustard, 1 tablespoon dill pickle relish, and 1/4 teaspoon smoked paprika to the mashed eggs.
Stir the mixture until well combined.
Add salt and black pepper to taste and mix again.
Spread the egg salad on a piece of Sola bread and sprinkle with more smoked paprika.
