Greek yogurt reduces calories while maintaining creaminess
Combine the yeast, flour, salt, and malt powder (or brown sugar or barley malt syrup) in a bowl.
Add 1 and 1/3 cups of lukewarm water to the dry ingredients.
Use a stand mixer to knead the dough vigorously for 10 minutes, or knead by hand for 15 minutes until the dough is stiff and holds its shape.
After kneading, optionally knead the dough a little more by hand for enjoyment.
Place the dough in a lightly greased bowl and cover it with plastic wrap or a towel.
Let the dough rise until noticeably puffy, about 1 to 1.5 hours.
Punch down the dough gently and remove it from the bowl onto a work surface.
Divide the dough into 8 pieces for larger bagels or 12 pieces for standard size bagels.
Let the divided pieces rest for about 30 minutes.
Prepare the water bath by heating water, malt, and sugar to a gentle boil in a large wide pan.
Preheat the oven to 425°F.
Roll each piece of dough into a smooth round ball.
Poke a hole through the center of each ball with your index finger and stretch the hole to about 1.5 to 2 inches in diameter.
Transfer the bagels a couple at a time to the simmering water and cook for 2 minutes on one side.
Flip the bagels and cook for another minute on the other side.
Use a skimmer or strainer to remove the bagels from the water and place them on a cooking sheet lined with parchment paper.
Prepare the egg wash and lightly paint it on each bagel.
Sprinkle bagel seasoning, sesame seeds, and poppy seeds on top of the bagels.
Bake the bagels in the oven for 20 to 25 minutes or until they are a deep brown or to your liking.
Let the bagels cool before cutting into one and enjoying.
