It reflects the historical practice of preserving food through fermentation, a necessity in harsh climates. This dish is often enjoyed during festive occasions such as Þorrablót, a midwinter festival celebrating Icelandic culture. While sörur may seem unusual to some, it embodies the resourcefulness of Icelandic cuisine and is a testament to the importance of local ingredients and traditions.

Beat the egg whites until they are stiff.
Mix the almond flour and powdered sugar together.
Gently mix the almond flour and powdered sugar with the egg whites to prepare the dough for the base.
Make the cookies using two small spoons and place them on a baking sheet.
Put them in the preheated oven at 200°C for 12 minutes until light brown.
Let the cookies cool down.
Boil water and add sugar, stirring until dissolved.
Keep cooking at medium-high temperature and let cool down.
Beat the egg yolks until light yellow.
Mix in the lukewarm syrup.
Slowly add the softened butter while mixing continuously.
Add the coffee mixture (powdered coffee mixed with strong coffee) and ensure the mixture is cold.
Turn the cookies around and let the cream cool down.
Put the cream on top of the cookies in the shape of a hill.
Put the cookies in the freezer.
Melt the chocolate in a water bath or at low heat and let it cool down a bit.
Take the cookies out of the freezer and dip them into the melted chocolate.
Let them cool down and put them back in the freezer.
Enjoy the cookies cold!
