Sift together 1 1/4 cups all-purpose flour, 1/3 cup almond flour, 1/2 cup confectioner sugar, 1/4 teaspoon salt, and 1/4 teaspoon baking powder into a bowl.
Cut 5 tablespoons of cold unsalted butter into small cubes and add to the dry ingredients.
Beat on medium low speed until the mixture is grainy and mealy, about a few minutes.
Add 3 large cold egg yolks and the seeds from 1/2 vanilla bean to the mixture and beat on medium low speed until combined.
Divide the pastry into six 60-gram pieces for individual tarts.
Wrap each piece in plastic wrap and refrigerate for at least 6 hours to chill.
Roll out the chilled pastry into a round shape about 5 1/2 inches in diameter for a 4-inch tart ring.
Chill the rolled pastry for an additional 15 to 30 minutes to prevent shrinkage during baking.
Preheat the oven to 350°F (175°C).
Fit the chilled pastry into the tart ring and trim the edges.
Prick the bottom of the pastry with a fork to prevent bubbling during baking.
Bake the pastry in the preheated oven until lightly golden, about 15-20 minutes.
Prepare the key lime filling by whisking together key lime juice, sweetened condensed milk, and egg yolks until smooth.
Pour the filling into the baked tart shells and bake for an additional 10-12 minutes until set but not browned.
Remove from the oven and let cool at room temperature for about 30 minutes before chilling in the refrigerator for at least 2 hours.
Top with whipped cream before serving.
