1 tablespoon taco seasoning mix
1 teaspoon red chili powder
1 teaspoon chili flakes
1 teaspoon oregano
1 1/2 tablespoons ketchup
1 cup long-grain rice
2 cups water
1/2 cup soaked and pressure-cooked kidney beans
1/2 cup boiled corn
salt to taste

Heat 1 tablespoon of oil in a pan.

Add 1 small finely chopped onion and 2 tablespoons of finely chopped garlic, sauté for 2 minutes.

Char 3 small tomatoes in the oven for 20 minutes, then blend into a pulp and add to the pan, cooking for 2-3 minutes.

Add seasoning: 1/2 teaspoon cumin seed powder, 1 tablespoon taco seasoning mix, 1 teaspoon red chili powder, 1 teaspoon chili flakes, 1 teaspoon oregano, and 1 1/2 tablespoons ketchup.

Add 1 cup of washed and soaked long-grain rice and 2 cups of water, cover, and let simmer for 5 minutes.

Check the rice; when half done, add 1/2 cup of soaked and pressure-cooked kidney beans, 1/2 cup of boiled corn, salt to taste, coriander leaves, and spring onion leaves. Mix lightly.

Cover and cook until the rice is done.

Once done, turn off the flame and add 1 1/2 tablespoons of grated cheddar cheese, mixing until melted.
