1 lb boneless skinless chicken thighs
100g (about 3) shallots, rough chopped
15g (about 5 cloves) garlic, minced
15g (about 3 Tbsp) ginger, grated or minced
175g (2 cups) green beans, cut into 2"/5cm pieces
1 bunch (about 4 cups) raw spinach
20g (about 1 cup) fresh basil, chiffonade
2 eggs
High smoke point oil (peanut, canola, grapeseed, etc)
Salt
Pinch red chili flakes
25g (1 1/2 Tbsp) soy sauce
25g (1 1/2 Tbsp) fish sauce
50g (3 Tbsp) oyster sauce
50g (3 Tbsp + 1 tsp) chicken stock
25g (2 Tbsp) brown sugar
