Orecchiette

2 cups orecchiette pasta
4 cups water
1 tsp salt
2 tbsp olive oil
2 cloves garlic, minced
1/2 tsp red pepper flakes
1 cup broccoli florets
1/2 cup grated Parmesan cheese
Salt and pepper to taste

Bring 4 cups of water to a boil in a large pot.

Add 1 tsp of salt to the boiling water.

Add the orecchiette pasta and cook according to package instructions until al dente, about 10-12 minutes.

In the last 3 minutes of cooking, add the broccoli florets to the pot with the pasta.

Once cooked, drain the pasta and broccoli, reserving 1/2 cup of the pasta water.

In a large skillet, heat 2 tbsp of olive oil over medium heat.

Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.

Add the drained pasta and broccoli to the skillet, tossing to combine.

If the mixture seems dry, add a little reserved pasta water to reach desired consistency.

Stir in the grated Parmesan cheese and season with salt and pepper to taste.

Serve hot, garnished with additional Parmesan if desired.
