Peel and chop 2 lbs of potatoes.
Slice the white part of 2 green onions and reserve the green tops for later.
Add potatoes and cabbage to a pot, cover with cold water, and bring to a boil.
Once boiling, cook for 20 minutes.
Strain the potatoes and cabbage.
Return to the pot and add 1/2 stick of butter and 1/2 cup of milk.
Season with salt and black pepper and mash until smooth.
Serve with a generous dusting of green onion tops and parsley.
