In a bowl, combine ½ cup flour, ½ tbsp cocoa powder, and ½ tsp salt.
In a saucepan, bring ½ cup water to a boil and add ⅛ cup unsalted butter and 1 tbsp brown sugar, stirring until melted.
Remove from heat and add the flour mixture, stirring until a dough forms.
Add 2 eggs one at a time, mixing well after each addition.
Add about 12 drops of red food coloring and 1 tsp vanilla, mixing until combined.
Spray a frying pan or pot with cooking-oil spray and fill it with oil to ¾ full for frying.
Heat the oil to 350°F (175°C).
Scoop the dough into a piping bag fitted with a star tip and pipe churro shapes into the hot oil, cutting them to desired lengths.
Fry until golden brown, about 2-3 minutes per side, then remove and drain on paper towels.
Mix 1 cup sugar with 2 tbsp cinnamon to make cinnamon sugar and roll the churros in this mixture.
Serve churros in bowls topped with ice cream, dulce de leche or cajeta, sprinkles, and whipped cream.
