1 cup carrot, diced
1 cup celery, chopped
3 cloves garlic, minced
2 medium potatoes, diced
1 cup green pepper, chopped
1 medium spanish onion, chopped
2 tablespoons extra virgin olive oil
1 tablespoon vinegar
1 teaspoon paprika
2 bay leaves
1 tablespoon cumin powder
1 teaspoon oregano
4 cups vegetable stock (made from stock cube)
1/4 cup fresh parsley, chopped
1 teaspoon salt
1/2 teaspoon pepper
1 can (14 oz) chopped tomato
1 cup dry lentils

Peel the carrots and cut them diagonally into about 3 centimeter chunks.

Cut the celery and potatoes diagonally in the same way.

Cut the green peppers into large chunks and thinly slice the onion.

Peel and thinly slice the garlic.

Place a large pot over high heat and pour in extra virgin olive oil.

Add all the vegetables except the potatoes and brown them for about 15 minutes until caramelized.

Add paprika, oregano, vegetable stock cube, cumin, and bay leaves, frying for about 3 minutes.

Add chopped tomato tins and cook for a further 5 minutes until it becomes a thick paste.

Add a little vinegar, potatoes, lentils, and seasoning (salt and pepper).

Pour in water from the kettle and simmer for about 25 minutes or until lentils are ready.

Roughly chop parsley and add it just before removing from heat.
