Trini Green Seasoning

Cultural Context

Originating from Trinidad and Tobago, Green Seasoning is a vibrant blend of fresh herbs and spices used to marinate meats, fish, and vegetables. This seasoning reflects the island's rich culinary heritage, combining flavors that are both aromatic and zesty. It's a staple in Caribbean kitchens, often made in large batches for convenience, and has gained popularity beyond the region for its versatility in various dishes.

💰Cheaper: vegetable oil

Vegetable oil is more affordable for cooking.

1

Roughly chop all of the ingredients: fresh thyme, cilantro, parsley, fresh basil, celery salt, weiri pepper, pimento peppers, and lots of garlic.

2

Place all the chopped ingredients into a large bowl to have space on the cutting board for more chopping.

3

Use a food processor to blend the ingredients, but a blender or mortar and pestle can also be used.

4

Pulse the food processor to blend the ingredients, adding more seasoning as needed.

5

Use a spatula to mix and push down the sides of the food processor to ensure everything blends well.

6

Once the first batch is blended, remove it and place it into a bowl to avoid overloading the food processor.

7

Blend the second batch of seasoning and mix both batches together for consistency.

8

Add a splash of lime juice or vinegar to help preserve the color and flavor of the green seasoning.

9

Optionally add a bit of water or oil to help with blending, and salt to taste.

10

To store, freeze the green seasoning in an ice cube tray, then transfer the cubes to a freezer bag for long-term storage.

11

Alternatively, place the seasoning in a Ziploc bag, squeeze out excess air, and flatten it before freezing for easier portioning later.
