Vegan Split Pea Soup

1 pound split peas
medium carrots, peeled and diced
1 and a half cups white onion, chopped
4 garlic cloves, smashed
1 bay leaf
1 tablespoon salt
1 teaspoon pepper
4 cups vegetable broth
2 cups water

Clean the split peas before use.

Peel and dice the carrots.

Place the split peas in a slow cooker.

Add the diced carrots to the slow cooker.

Add 1 and a half cups of chopped white onions to the slow cooker.

Add 4 smashed garlic cloves to the slow cooker.

Add 1 bay leaf to the slow cooker.

Add 1 tablespoon of salt to the slow cooker.

Add 1 teaspoon of pepper to the slow cooker.

Pour in 4 cups of vegetable broth and 2 cups of water into the slow cooker.

Close the slow cooker and set it to high for 5 hours.

After 5 hours, check on the soup and mix it up.

Remove the bay leaf from the soup.

Taste the soup and let it cool for a few minutes before serving.
