Vegan Split Pea Soup

1 cup split peas
1 medium onion, chopped
2 carrots, diced
2 celery stalks, diced
3 cloves garlic, minced
6 cups vegetable broth
1 bay leaf
1 tsp thyme
1/2 tsp black pepper
1/2 tsp salt

Rinse the split peas under cold water and set aside.

In a large pot, heat the olive oil over medium heat.

Add the chopped onion, carrots, and celery to the pot. Sauté for about 5-7 minutes until the vegetables are softened.

Stir in the minced garlic and cook for an additional minute until fragrant.

Add the rinsed split peas, vegetable broth, bay leaf, thyme, black pepper, and salt to the pot.

Bring the mixture to a boil, then reduce the heat to low and cover the pot.

Simmer for about 45 minutes to 1 hour, or until the split peas are tender and the soup has thickened.

Remove the bay leaf and use an immersion blender to puree the soup to your desired consistency, or leave it chunky if preferred.
