Sticky Buns

400g (3 1/3 C) All Purpose or Bread Flour
100g (1/2 C) Milk or Water
100g (2 lg) Eggs
50g (1/4 C) Sugar
8g (1/2 Tbsp) Salt
7g (2 tspn) Instant Yeast
125 g (2/3 C) Oil (vegetable/canola/grapeseed/melted unsalted butter/etc)
1/2 C sugar
1 Tbsp cinnamon
1 pinch salt
1/2 stick unsalted melted butter
1/2 C maple syrup

Mix all but oil in large bowl to combine (dough will look very shaggy) let rest covered in bowl 10 min

Add in oil, work/squeeze in with hands. Dough will break apart but work it long enough it will all come back together. Rest covered 30 minutes.

Knead dough in clean counter top/large cutting board using fold and turn method (fold dough over itself towards you, rotate dough quarter turn, repeat). Continue kneading for approx 5 minutes, until dough becomes smooth and silky. Rest in oiled/greased bowl covered for 1 1/2 hours.

Punch down and fold dough, rest 1 hour more covered.

Flip dough out of bowl onto counter/large cutting board. De-gass dough (press all air out)

Shape into log (roll the dough in thirds toward yourself). Place seam side down in oiled loaf pan. Final rest/proof 1 hour covered (until almost doubled in size)

(scramble 1 egg and brush egg wash on top of dough if you want shiny crust) Bake at 375*F 20-30 minutes until golden brown

Roll dough into approx 8" x 14" rectangle

Sprinkle cinn/sugar blend, spread out in even layer to all edges

Roll up dough (long ways) tight towards yourself, seal seam by pinching dough with fingers

Slice (gentle sawing motion with serrated knife so you don't crush the roll) in 2" pieces. Place cut pieces evenly in greased 9" brownie pan. Let rise 1 hour more, covered.

Bake approx 18-20" 375*F

Pour sticky syrup on top and serve warm
