2 cups coconut thick milk

Peel and chop the yellow cucumber into bite-sized pieces.

Heat oil in a large pan over medium heat until shimmering.

Add mustard seeds and cook until they start to pop, about 1-2 minutes.

Add chopped onion, garlic, and green chili; sauté until onion is translucent, about 3-4 minutes.

Stir in turmeric powder, curry powder, and chili powder; cook for 1 minute until fragrant.
