1/2 tsp ground garlic
1/2 tsp ground onion
1/2 tsp dried oregano
1 tsp cumin
1 tsp paprika powder
1/8 tsp cayenne pepper
1/4 tsp cooking salt

Heat 2 tsp olive oil on high in a pan, cook beef mince until mostly red is gone.

Add taco seasoning (1/2 tsp each of ground garlic, onion, and dried oregano; 1 tsp each of cumin and paprika powder; 1/8 tsp cayenne pepper) and cook for 1 minute.

Add 1 tbsp tomato paste and cook for 1 minute.

Add corn, black beans, and 2 tbsp water, stir in and cool for 15 minutes.

Preheat oven to 220°C / 425°F (200°C fan-forced). Grease a tray with 2 tsp olive oil.

Spread filling on one side of each tortilla, top with 1 1/4 cups shredded cheese, fold, and place on the tray.

Drizzle each quesadilla with 1/2 tsp olive oil, spreading on the surface and folded side.

Bake for 8 minutes, flip, bake for another 5 minutes, flip again, and bake for 2 more minutes or until crisp.
