Preheat the oven to 400 F if you are baking your quesadillas.

Heat a pan on medium heat. When the pan is hot, add the olive oil. As soon as the oil gets hot, add in your beef. Using a wooden spoon or spatula, break the large chunks of meat down until most of the meat has browned.

Add in salt, pepper, and taco seasoning. Combine the spices and add the chopped green chilies in the pan. Mix well and turn off the heat.

Next, assemble the quesadilla. On a tortilla, add a third of the guacamole, the meat mixture, and the cheese. Fold the quesadilla in half, and press lightly to ensure the ingredients are well-melded together. Repeat with the remaining tortillas.

Brush the quesadillas with the remaining olive oil and bake the quesadillas in the oven for 10-12 minutes, flipping them halfway through the cooking time. Alternatively, you may brush the quesadilla with olive oil and pan fry the tortillas on medium heat for 2-3 minutes on each side. Cook until light golden brown.

Once the quesadillas have finished baking, transfer them onto a cutting board and cut them in 2-3 equal sized triangles. Serve with pico de gallo and sour cream and enjoy!
