Mix water, milk, yeast, and sugar in a saucepan and gently heat to no more than 30 degrees Celsius.
Pour the mixture into a mixer, add 80 ml of olive oil, and set aside 40 ml.
Stir for a couple of minutes and add flour.
Once combined, add salt and knead until the dough is elastic.
Set the kneaded dough aside for 10 minutes to rest.
Rub the table and rolling pin with olive oil.
Divide the dough in half and form into balls, rolling out each to a circle 1 cm thick.
Cut the dough into eight pieces like a pizza.
For one loaf, fold each piece tightly like a croissant and place in a metal ring.
For the second loaf, fold the triangle in half with grated cheese inside and roll it up.
Let the dough proof until doubled in size.
Brush with a beaten egg and sprinkle with pumpkin, poppy, or sesame seeds.
Bake in the oven at 180 degrees Celsius for 25 minutes.
Check the bread's readiness with a thermometer; it should be at least 90 degrees Celsius inside.
Let the bread cool and remove from the mold.
