Combine 1/2 cup warm water with 1/4 cup sugar in a glass measuring cup to dissolve the sugar.

Add 3 cups of cool water to the dissolved sugar mixture.

Drop in the water kefir grains.

Cover the mixture with a napkin and secure it with a rubber band.

Let it sit at room temperature for 3 days to wake up the grains.

After 3 days, strain out the grains, saving just the grains and discarding the water.

In a one quart mason jar, add your choice of juice or coconut water, or repeat the sugar water mixture with 1/4 cup sugar and 3.5 cups water.

Mix in the grains and let it ferment for 24 hours.

Strain the liquid into a cup or bottle, and place the grains into another batch of sugar water to continue the cycle.
