Add bell peppers and cook for another 3-4 minutes until softened.
Stir in tomatoes and chickpeas, cooking until heated through, about 5 minutes.
Season mixture with salt, pepper, and additional spices if desired.
Serve sliced chicken over chickpea mixture, garnished with fresh parsley.
