1 onion

6 dried apricots

Marinate 2 pounds of chicken with 1 cup of chopped parsley, 1 cup of chopped cilantro, and 3 small lemons (pulp removed).

Soak 1/4 teaspoon of saffron in 1/4 cup of warm water.

Add 1 tablespoon of roughly chopped garlic, 2 teaspoons of cumin, 1 teaspoon of ginger, 1/2 teaspoon of white pepper, 1 teaspoon of paprika, and 1 teaspoon of red pepper to the marinade.

Add 1/2 teaspoon of lemon pulp juice and 2 tablespoons of olive oil to the marinade and mix well.

Let the chicken marinate for 1 hour.

Chop 1 onion and place it at the bottom of the cooking pan.

Cut 2 potatoes lengthwise and add them to the pan.

Heat 3 tablespoons of olive oil in the pan over low heat and add the diced onion.

Add the marinated chicken on top of the onions in the pan.

Add the 2 lengthwise cut potatoes and 6 dried apricots on top of the chicken.

Pour the remaining marinade over the chicken and potatoes.

Cover the pan and cook on medium-low heat for 30 minutes.

After 30 minutes, uncover the pan and cook for an additional 10 minutes, basting the chicken with the juices from the bottom.

Taste the chicken and add salt if desired, then drizzle with olive oil and add lemon skin on top.

Squeeze a little lemon juice on top before serving.
