1 cup cider
1 onion, sliced
2 cloves garlic, minced
2 tbsp olive oil
1 tsp smoked paprika
1/2 tsp salt
1/4 tsp black pepper
1 bay leaf

Open a bottle of sidra and pour at least half into a cazuela.

Place 4 chorizos in the cazuela.

Make small cuts on the top of each chorizo using a sharp knife.

Pour in about half a bottle of sidra over the chorizos.

Cook on high heat for 5 minutes until it boils vigorously.

Lower the heat to medium or slightly lower and turn the chorizos a few times to release their fat.

Cover the cazuela, leaving a small gap for steam to escape, and cook for 10 minutes.

If the chorizos are a bit tough, cook for an additional 5 minutes without the lid.

Remove the chorizos from the cazuela once cooked.

Increase the heat and cook the remaining sauce for 2 minutes to thicken it.

Slice the chorizos into rounds and place them on a serving plate.

Pour the thickened sauce over the sliced chorizos.
