Add 1 tablespoon of olive oil and 1 tablespoon of butter to a Dutch oven or large pot
Dice 1 yellow onion and add it to the pot; cook for about 3 to 4 minutes until softened
Add 1 tablespoon of minced garlic and stir for about 15 seconds
Stir in 1 tablespoon of tomato paste, then add 1 can of drained corn
Add 1 can of drained and rinsed black beans and 1 can of Rotel
Pour in 5 cups of chicken broth and add 2 uncooked chicken breasts
Season with 1 teaspoon of pepper, 1 teaspoon of salt, and 1 tablespoon of taco seasoning; stir well
Cover and let simmer for about 20 minutes or until chicken is cooked through
Remove chicken from the pot and cube it; return to the pot
Add 4 tablespoons of cubed cream cheese and 1 cup of shredded cheddar cheese; stir until melted
Serve topped with shredded cheese, tomato, sour cream, avocado, and crushed tortilla chips
For chicken noodle soup, add 1 tablespoon of butter to a Dutch oven
Add 1 diced yellow onion, 1 cup of diced carrots, and 3/4 cup of sliced celery; cook for 5 to 7 minutes
Add 1 tablespoon of minced garlic, 1 teaspoon of pepper, 1 teaspoon of salt, 1 teaspoon of dried thyme, and 1/2 teaspoon of dried sage; stir and scrape the bottom of the pot
Pour in 9 cups of chicken broth and bring to a simmer
Add 8 oz of egg noodles and let simmer for 8 to 18 minutes until pasta is tender
Add 2 cups of cooked shredded chicken and juice from half a lemon; stir well
Serve with a roll heated in the oven
For potato soup, cook 6 strips of sliced bacon in a pot until crispy
Remove bacon and set aside; retain grease in the pot
Add 1 diced yellow onion and cook for 3 to 4 minutes
Add 1 tablespoon of minced garlic and cook for 15 seconds
Stir in 3/4 cup of all-purpose flour until golden
Slowly whisk in 4 cups of chicken broth, then add 2 cups of milk and 2/3 cup of heavy cream
Add diced potatoes, 1 teaspoon of salt, 1 teaspoon of pepper, and 1/2 teaspoon of chili powder; simmer for 10 minutes
Mash some potatoes for creaminess, then add 2/3 cup of sour cream and 3/4 cup of shredded cheddar cheese; stir well and simmer for 3 minutes
Serve topped with sliced chives and bacon bits
For minestrone soup, dice 1 yellow onion, 3 carrots, 1 medium zucchini, and 2 ribs of celery
Add 1 tablespoon of olive oil to a pot and add the diced vegetables; cook for 5 to 7 minutes
Add 1 teaspoon of salt and 1 teaspoon of pepper
Pour in 5 1/2 cups of vegetable broth, 28 oz of crushed tomatoes, 14 oz of tomato sauce, and 1 can of drained kidney beans; stir well
Add the zucchini and season with 1 tablespoon of dried basil, 2 teaspoons of dried parsley, and 1 teaspoon of dried oregano; simmer for 15 minutes
Add 1 1/2 cups of small pasta and cook for 10 minutes until tender
Stir in 2 cups of fresh chopped spinach until wilted; serve topped with Parmesan cheese and fresh parsley
