Preheat the oven to 400°F (200°C).

Wash and scrub the potatoes thoroughly.

Pierce each potato several times with a fork.

Rub the potatoes with olive oil and sprinkle with salt.

Place the potatoes directly on the oven rack and bake until tender, about 45-60 minutes.

Remove the potatoes and let them cool slightly before handling.

Cut each potato in half lengthwise and scoop out some flesh, leaving about 1/4 inch of potato inside.

Brush the insides of the potato skins with olive oil and season with salt, black pepper, and paprika.

Place the potato skins on a baking sheet, cut side up.

Fill each skin with shredded cheddar cheese and crumbled bacon.

Return the filled potato skins to the oven and bake until the cheese is melted and bubbly, about 10-15 minutes.

Remove from the oven and garnish with chopped green onions and chives.

Serve hot with a dollop of sour cream on the side.
