Sauce Algerienne

1 small onion
1/2 red pepper
1 teaspoon tomato paste
1 teaspoon ground coriander
1 teaspoon harissa
1 egg yolk
1 teaspoon whole grain mustard
120 ml oil
salt

In a lightly oiled pan, brown 1 small onion cut into very small pieces with 1/2 red pepper cut into small dice.

Add 1 teaspoon of tomato paste and 1 teaspoon of ground coriander to the pan and mix well.

Let it cook for 5 minutes.

Add 1 teaspoon of harissa and mix one last time, then let it cool completely.

Prepare homemade mayonnaise in a bowl by adding 1 egg yolk first, then 1 teaspoon of whole grain mustard.

Add 120 ml of oil little by little while whisking continuously by hand for about 1 to 1.5 minutes.

Once the mayonnaise is well prepared, add a little salt and pepper.

Incorporate the cooled pepper and onion mixture into the mayonnaise to complete the Algerian sauce.
