1/2 red onion
small bunch of coriander or parsley
1 tbsp lemon juice
350 g ready mayonnaise
1 room temperature egg
1 tbsp Dijon mustard
1/2 tsp salt
pinch of pepper
300 ml sunflower oil
1 tbsp tomato paste
1 tsp harissa
1 tsp sugar
1/2 tsp cumin
1 tsp paprika
1 tsp white vinegar

Slice 1/2 red onion as finely as possible and put in a salad bowl.

Finely chop a small bunch of coriander or parsley and add to the bowl.

For homemade mayonnaise, add 1 tbsp of lemon juice, 1 room temperature egg, 1 tbsp of Dijon mustard, 1/2 tsp of salt, and a pinch of pepper in a bowl.

Pour in 300 ml of sunflower oil and mix with a hand blender until smooth, about thirty seconds.

Pour the mayonnaise over the onions and cilantro in the salad bowl.

Add 1 tbsp of tomato paste, 1 tsp of harissa, 1 tsp of sugar, 1/2 tsp of cumin, and 1 tsp of paprika to the bowl.

Add 1 tsp of white vinegar and mix until smooth.

Taste and adjust seasoning as needed.

Store in an airtight box or glass jar.
